I started marking the expiration date BIG AND BLACK on the front. so the date IS yelling at me as soon as I open the door

That's a really good idea. I should adapt this for some stuff. On the other hand I also eat dips and sauces expired +- 3 years ago if they still smell and taste good ... sooooo. If I remember correctly there is some sauce expired in 2021 in my fridge right now.
