Cooking for 1

Feeding myself with ADHD is hard enough. Add the challenge of cooking for 1 & it feels impossible. Microwave & processed foods fill the void. I want a healthier diet, preferably Mediterranean based (no fish). Any tips, tricks, recipes? I won't bulk cook. Don't even go there. Don't have the space, containers or brain power. 😅 TIA!

I cook 6L of soup from 16 vegetable and put it into jars, I share them and get eggs and other foods in return, I always break my fast with this extremely healthy dish

Don’t cook one meal, make big batches and freeze, 1 portion m, 1 portion goes in the fridge for lunch/dinner next day

I understand the struggle. When both my kids were still with me fulltime, I could do it, because they have to eat, but as soon as they were out of their diapers (8 months ago), their dad suddenly took an interest and now they stay with him two or three nights a week. Sofar, I've lost 10 kg (20 pounds?)...

Hello fresh worked well for me untill I constantly forgot to customise my meals.

I also do hello fresh. Only time I cook. Every meal kit is equivalent to 1 dinner and two lunches for me, or 1 dinner each for me and a dining companion

Microwave rice, mini kids size cans of beans, corn and other things like chickpeas. Throw in a bowel in the microwave and season. If you feel more motivated, cook extra veggies to go on top.

I’ve been doing hello fresh for a while and the way that it takes away my decision fatigue and has taught me how to cook healthy meals has been a game changer. There’s cheaper options like every plate but I like hello fresh the best. I don’t know if there’s a one person option but you could make the 2 meals and save the second one for lunch!
